That first Assassination build is a really good one. I use it on my rogue and I hit 8k DPS in Onyxia the other night. I only had 2 pieces of T9 at the time.

You always want to have a person with a high score in your group or guild.
Gear score is judged by how advanced your gear is in the game so far.
The better gear you have the bigger raids you can jump in to.

(taking other things into consideration as well)
For tanks: the higher your score the more aggro you hold
Healers: higher your gear score the better you hea
DPS: the higher your score the more DEEPS you pull.

And, yes; the higher your gear score the better raids you can do - shown on the little bar on wowheroes

With all of this being said:
I do know people who don't have the highest gear score but are really good players; good at their class and the game in general.
Many guild will give you a test run so they can see how you play... since your spec and rotation has A LOT to do with how your toon performs.

My spec is: 51/13/7

I duel weirld daggers and use the following rotation:
1.Open with Garrote, if possible.
2.Slice and Dice
3.Hunger for Blood
4.Mutilate
5.Eviscerate or Envenom (to refresh SnD)
6.Multilate to 5 CP
7.Rupture
8.Mutlilate to 5 CP
9.Eviscerate/Envonom
10.go to 6
11.Refresh Hunger for Blood every minute.
12.Shiv where appropriate

I hit 8k DPS in Onyxia with 2 pieces of T9. I thought it went well. (:
But assassination's rotations are more complicated than combat's.

With this rotation I hat 8k in Onyxia with two T9 pieces. It is very good but you must be careful when using it and making sure you have the correct amount of combo points before certain attacks. (:
